Gorgonzola, an Italian-style blue cheese made in Wisconsin, has greenish-blue veins. It is very creamy and spreadable.
It has a full earthy flavor.
Toss with hot pasta or crumble with tomatoes and artichoke hearts. Stuff fresh figs or dried apricots with the Italian style gorgonzola.
